Ingredients
Scale
For the Taco Beef Filling
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 1 ½ cups shredded cheddar cheese
- ½ cup diced red and yellow bell peppers
For the Dough and Assembly
- 1 pound pizza dough
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- Preheat oven and prepare baking sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and simplify cleanup.
- Cook the ground beef: In a skillet over medium heat, cook the ground beef, breaking it apart with a spatula, until browned with no pink remaining. Drain excess fat to avoid greasy filling.
- Season and mix filling: Allow the beef to cool slightly, then sprinkle in the taco seasoning. Mix well, then fold in diced bell peppers and shredded cheddar cheese for vibrant color and flavor.
- Roll out the dough: On a lightly floured surface, roll the pizza dough into a ¼-inch thick rectangle to ensure even distribution of filling.
- Assemble the rolls: Spread the beef mixture evenly over the dough leaving a small border around the edges. Roll dough tightly from the longer side into a log shape, ensuring it’s snug but with enough room for expansion.
- Slice and arrange: Using a sharp knife, cut the log into 1-inch spiral slices. Place them cut-side up on the prepared baking sheet spaced apart. Brush tops with olive oil to promote browning.
- Bake and garnish: Bake in the preheated oven for 18–22 minutes until the rolls are golden and bubbly. Remove and let cool for a few minutes before garnishing with chopped fresh cilantro. Serve warm.
Notes
- You can substitute the bell peppers with other veggies like jalapeños for a spicy kick.
- To elevate flavor, add some diced onions or a dash of cumin to the taco beef mixture.
- Use pre-made pizza dough to save time or make your own from scratch.
- These rolls freeze well before baking – freeze sliced rolls on a tray then transfer to a bag; bake straight from frozen, adding 5 extra minutes to baking time.
- Serve with salsa, sour cream, or guacamole for extra dipping options.
