Beef Mixture
- 1 pound lean ground beef
- 1/2 medium onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1 tablespoon chili powder
Additional Ingredients
- 1 (14 fluid ounce) can black beans, drained and rinsed
- 1 (14.5 fluid ounce) jar salsa, use your favorite kind
- 4 medium flour tortillas, cut into quarters
- 1 cup Tex-Mex cheese blend, shredded

Instructions
- Cook the beef and onions: Heat a skillet over medium-high heat and add the ground beef and chopped onions. Break the meat up with a spoon. Once the meat is partially cooked, add garlic powder, onion powder, smoked paprika, ground cumin, and chili powder. Stir occasionally and cook for 8-10 minutes until the beef is fully cooked. If there is excess fat, spoon it out.
- Preheat the broiler: Set your oven broiler to high heat and move the oven rack to the top third position to prepare for melting the cheese.
- Combine beans, salsa, and tortillas: Reduce the stove heat to medium. Add the drained black beans, salsa, and quartered flour tortillas to the skillet. Gently toss with two spoons to fold the tortillas in evenly, making sure they’re spread out uniformly in the skillet. This step allows the tortillas to soften and soak up some of the juices.
- Heat through: Let the skillet mixture heat on the stove for a few minutes to warm everything through.
- Add cheese and broil: Sprinkle shredded Tex-Mex cheese blend evenly over the skillet contents. Transfer the skillet to the oven and broil for a few minutes until the cheese is bubbly and browned, carefully watching to avoid burning.
- Serve with toppings: Remove from the oven and serve immediately. Add optional toppings such as sour cream, chopped scallions, cilantro, or avocado. Adjust seasoning with salt and pepper if needed.
Notes
- For a firmer texture and less soggy tortillas, you can skip adding the tortillas to the skillet and instead serve them on the side or add them just before serving.
- Use lean ground beef to minimize excess fat and grease in the skillet.
- Feel free to swap flour tortillas for corn tortillas if preferred, but cutting and folding may require extra care as they are more fragile.
- Keep an eye on the broiler to prevent the cheese from burning as it can brown quickly.
