Description

A delicious and hearty Breakfast Club Sandwich featuring crispy bacon, runny eggs, fresh avocado, and melted cheddar cheese layered between toasted whole grain bread slices. Perfect for a satisfying morning meal that combines rich flavors and textures.

Bread & Spread

  • 3 slices of whole grain bread
  • 2 tablespoons mayonnaise
  • 1 tablespoon butter

Protein

  • 2 large eggs
  • 4 slices of smoked bacon
  • 2 slices of cheddar cheese

  • 1 ripe tomato, thinly sliced
  • 1 avocado, mashed
  • Fresh lettuce leaves
  • Salt and pepper to taste


Instructions

  1. Cook the bacon. Heat a skillet over medium heat and cook the smoked bacon slices until crispy. Remove and drain on paper towels to absorb excess grease. Set aside.
  2. Prepare the eggs. In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set but yolks remain runny. Optionally, flip the eggs to cook the other side if you prefer a less runny yolk.
  3. Toast the bread. Toast the whole grain bread slices until golden brown using a toaster or an oven broiler for a crisp texture.
  4. Apply mayonnaise. Spread mayonnaise evenly on one side of each toasted bread slice to add moisture and flavor.
  5. Assemble first layers. On the first slice of bread (mayonnaise side up), layer fresh lettuce leaves, tomato slices, and crispy bacon strips.
  6. Add the middle bread slice. Place the second slice of bread on top, mayonnaise side down. Spread the mashed avocado over the top side of this slice for a creamy layer.
  7. Add eggs and cheese. Place the cooked eggs on top of the avocado spread, then add the cheddar cheese slices for a melty, savory element.
  8. Complete the sandwich. Top with the final slice of bread, mayonnaise side down. Press gently to secure all ingredients evenly within the sandwich.
  9. Serve. Use toothpicks to hold the sandwich together, then cut it into halves or quarters for easy handling and presentation.
