Potatoes
- 3 large potatoes
- Olive oil (for tossing potatoes)
- Salt (to taste)
- Black pepper (to taste)
- Garlic powder (to taste)
- Paprika (to taste)
Beef Mixture
- 1 lb ground beef
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp dried cilantro
- 1 tsp paprika
- 1 tbsp minced garlic
- 1/2 cup water
Assembly
- Nacho cheese (as needed)
- 5 burrito-size flour tortillas
- Taco sauce (as needed)
Instructions
- Prepare Potatoes: Peel, wash, and cut the potatoes into small cubes. Toss them in a large bowl with olive oil, salt, pepper, paprika, and garlic powder to evenly coat the pieces.
- Air Fry Potatoes: Place the seasoned potato cubes in the air fryer. Cook at 400°F (204°C) for approximately 25 minutes, shaking the basket a couple of times to ensure even crispiness.
- Cook Ground Beef: While potatoes are cooking, heat a large skillet over medium-high heat. Add 1 lb of ground beef and season with salt, pepper, chili powder, cumin, dried cilantro, paprika, and minced garlic. Cook until fully browned, drain excess grease, then stir in 1/2 cup water. Reduce heat to low and keep warm.
- Finish Potatoes & Beef: Allow the ground beef to remain over low heat while the potatoes crisp up in the air fryer.
- Assemble Burritos: Lay out each flour tortilla and spread a layer of nacho cheese. Add a scoop of seasoned ground beef, a drizzle of taco sauce, then a scoop of crispy potatoes. Top with additional nacho cheese, then roll the burrito tightly.
- Cook Burritos: Heat a skillet over medium-high heat. Place the rolled burritos seam side down and cook until golden brown on all sides, giving the cheese a chance to melt and the tortillas to become crispy. Serve warm and enjoy!
Notes
- Feel free to use a taco seasoning packet instead of individual spices if preferred.
- The exact amount of olive oil, salt, pepper, and garlic powder for the potatoes can be adjusted to taste.
- Shaking the air fryer basket during cooking helps the potatoes crisp evenly.
- Make sure to cook the ground beef thoroughly and drain excess grease to avoid soggy burritos.
- To make burritos more filling, you can add extras like sour cream, lettuce, or diced tomatoes.
- If you don’t have an air fryer, you can roast the potatoes in the oven at 425°F (220°C) for about 30 minutes, flipping halfway through.
