Instructions

  1. Prepare Potatoes: Peel, wash, and cut the potatoes into small cubes. Toss them in a large bowl with olive oil, salt, pepper, paprika, and garlic powder to evenly coat the pieces.
  2. Air Fry Potatoes: Place the seasoned potato cubes in the air fryer. Cook at 400°F (204°C) for approximately 25 minutes, shaking the basket a couple of times to ensure even crispiness.
  3. Cook Ground Beef: While potatoes are cooking, heat a large skillet over medium-high heat. Add 1 lb of ground beef and season with salt, pepper, chili powder, cumin, dried cilantro, paprika, and minced garlic. Cook until fully browned, drain excess grease, then stir in 1/2 cup water. Reduce heat to low and keep warm.
  4. Finish Potatoes & Beef: Allow the ground beef to remain over low heat while the potatoes crisp up in the air fryer.
  5. Assemble Burritos: Lay out each flour tortilla and spread a layer of nacho cheese. Add a scoop of seasoned ground beef, a drizzle of taco sauce, then a scoop of crispy potatoes. Top with additional nacho cheese, then roll the burrito tightly.
  6. Cook Burritos: Heat a skillet over medium-high heat. Place the rolled burritos seam side down and cook until golden brown on all sides, giving the cheese a chance to melt and the tortillas to become crispy. Serve warm and enjoy!
