Ingredients
Scale
Chicken
- 4-6 pieces boneless skinless chicken thighs or breasts
- 2 teaspoons Italian seasoning (divided)
- 4 tablespoons oil (for sautéing)
- ½ teaspoon salt
- ¼ teaspoon black pepper
Roasted Red Pepper Sauce
- â…” cup roasted red peppers, chopped
- 1 tablespoon garlic, minced
- 1 cup heavy cream
Optional Garnish
- 2 tablespoons feta cheese, crumbled
- 1 tablespoon fresh basil, thinly sliced
Instructions
- Blend the Sauce: Combine the roasted red peppers, 1 teaspoon of Italian seasoning, oil, minced garlic, salt, and black pepper in a food processor or blender. Pulse until the mixture is smooth and creamy to form the base of the sauce.
- Cook the Chicken: Heat a splash of oil in a large skillet over medium heat. Season the chicken pieces with the remaining 1 teaspoon of Italian seasoning. Cook the chicken for 6-8 minutes on each side until fully cooked and lightly browned. Remove the chicken and keep it warm by covering it on a plate.
- Heat the Sauce: Pour the blended red pepper sauce into the same skillet. Stir over medium heat for 2-3 minutes until the sauce is hot. Then add the heavy cream and continue stirring for another 2-3 minutes until the sauce thickens and becomes luscious.
- Combine & Serve: Return the cooked chicken to the skillet and toss well to coat each piece thoroughly with the creamy red pepper sauce. Garnish with crumbled feta cheese and freshly sliced basil to add extra flavor and a vibrant touch.
- Optional Serving Suggestion: Serve alongside pasta or crusty bread to soak up the delicious sauce for a complete and hearty meal.
Notes
- Use either chicken thighs or breasts depending on your preference; thighs will be juicier, breasts leaner.
- If you cannot find roasted red peppers, you can roast fresh red peppers in the oven or on a grill, then peel and chop them.
- For a lighter version, substitute heavy cream with half-and-half or a dairy-free cream alternative.
- Feta cheese and fresh basil are optional but add a nice Mediterranean flavor.
- Adjust seasoning to taste, especially the salt and pepper depending on dietary needs.
