Description

This Creamy Garlic Parmesan Cabbage is a delicious low-carb skillet dish featuring tender cabbage wedges seared to golden perfection and smothered in a rich, garlicky Parmesan cream sauce with a hint of Cajun spice. Perfect as a comforting side or a light main, this recipe is quick to prepare and bursting with flavor.

Ingredients

Scale

Vegetables

  • 1 head green cabbage (cut into wedges)
  • 1 medium yellow onion (chopped)
  • 3 cloves garlic (minced)
  • fresh parsley (chopped, to garnish)

Dairy & Fats

  • 2 tablespoons unsalted butter (for searing)
  • 1 tablespoon olive oil (to prevent burning)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 1 cup Parmesan cheese (freshly grated)

Seasonings

  • 1 teaspoon Cajun seasoning (adjust to taste)
  • salt (to taste)
  • pepper (to taste)

Instructions

  1. Heat fats: Heat butter and olive oil in a large skillet over medium-high heat until hot and shimmering to prepare for searing the cabbage.
  2. Sear cabbage: Place cabbage wedges in the skillet and sear for 3-4 minutes on each side until golden brown. Once seared, remove the cabbage wedges from the skillet and set aside.
  3. Sauté onions: Lower the heat to medium and add the chopped onion to the skillet. Cook for about 5 minutes, stirring occasionally, until the onions are soft and translucent.
  4. Add garlic & seasoning: Stir in the minced garlic and Cajun seasoning, cooking for an additional minute to release their aromas.
  5. Simmer cream: Pour in the heavy cream, scraping up any browned bits from the bottom of the skillet. Let the mixture simmer gently for 2-3 minutes to thicken slightly.
  6. Add cheese & parsley: Stir in the freshly grated Parmesan cheese and chopped parsley until the cheese melts smoothly into the sauce.
  7. Combine cabbage and sauce: Return the seared cabbage wedges to the skillet, spooning the creamy sauce over them. Cover the skillet and cook for 5 minutes to let the cabbage absorb the flavors and finish cooking.
  8. Garnish and serve: Garnish with additional chopped fresh parsley before serving hot.

Notes

  • For a dairy-free version, substitute heavy cream with coconut cream and omit or replace Parmesan with a vegan alternative.
  • Adjust Cajun seasoning to your preferred spice level or substitute with smoked paprika for a milder flavor.
  • Ensure not to overcook cabbage to retain some texture and avoid mushiness.
  • Serve as a side dish or pair with grilled chicken or fish for a complete meal.
  • Use fresh Parmesan cheese for best melting quality and flavor.
