Description

This Doritos Taco Salad is a quick and satisfying meal combining seasoned ground beef with fresh veggies, black beans, and crunchy nacho cheese Doritos, all tossed in your favorite salad dressing. Perfect for a flavorful lunch or dinner in just 20 minutes.

Meat and Seasoning

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning

Salad Base

  • 3 to 4 Romaine lettuce hearts, rinsed and chopped
  • 1 cup black beans, rinsed
  • 1 large tomato, chopped or 1 cup sliced cherry tomatoes
  • 1/2 cup shredded cheddar cheese

Toppings and Dressing

  • 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
  • 1 cup Catalina dressing (or your favorite salad dressing like ranch)
  • Fresh cilantro (optional)


Instructions

  1. Brown the Beef: In a large skillet over medium-high heat, brown and crumble the lean ground beef. Drain the grease thoroughly to keep it lean. Add the taco seasoning and the water amount specified on the seasoning packet. Stir the mixture until it reaches a boil.
  2. Simmer the Meat: Once boiling, reduce the heat to low and let the meat simmer for 10 minutes to absorb the seasoning flavors. After simmering, remove from heat and let it cool slightly to avoid wilting the lettuce when assembled.
  3. Prepare the Salad Base: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Mix gently to distribute ingredients evenly.
  4. Add the Meat and Toss: Add the slightly cooled seasoned ground beef to the bowl with the salad ingredients. Toss everything gently to combine all flavors and textures uniformly.
  5. Chill if Desired: You may serve immediately or refrigerate the salad mixture until you’re ready to eat. Keep in mind that the Doritos chips should remain separate until just before serving to maintain their crunch.
  6. Finish with Chips and Dressing: When ready to serve, add the broken Doritos chips and your choice of dressing to the salad bowl. Toss gently to coat the salad in dressing and distribute the chips throughout. Garnish with fresh cilantro if desired and serve promptly for the best texture and flavor.
