Scale
Meat and Vegetables
- 1 lb ground beef
- 3 medium potatoes, peeled and diced
- 1 red bell pepper, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
Seasonings and Liquids
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper, to taste
- ¼ cup beef broth or water (optional)
Garnish
- Chopped green onions, for garnish
Instructions
- Heat Oil and Sauté Aromatics: In a large skillet or Dutch oven, heat 2 tablespoons of olive oil over medium heat to prepare for sautéing.
- Cook Onion and Garlic: Add finely chopped onion and minced garlic to the skillet, sautéing for 2-3 minutes until the onion becomes soft and fragrant.
- Brown the Ground Beef: Add 1 lb of ground beef to the skillet, breaking it apart with a spatula as it cooks. Continue cooking for 5-7 minutes until the beef is fully browned and no pink remains.
- Add Potatoes and Bell Pepper: Stir in the diced potatoes and red bell pepper evenly to combine with the beef mixture.
- Season the Mixture: Sprinkle in 1 teaspoon paprika, 1 teaspoon cumin, salt, and pepper to taste. Mix well to evenly distribute the spices.
- Optional Liquid Addition: Pour in ¼ cup of beef broth or water if desired, to help cook the potatoes and prevent sticking during simmering.
- Simmer Until Tender: Cover the skillet with a lid and reduce the heat to low. Let the casserole simmer gently for 15-20 minutes, stirring occasionally, until the potatoes are fork-tender and cooked through.
- Garnish and Serve: Remove from heat, sprinkle with chopped green onions for a fresh bite, and serve the casserole warm.
Notes
- You can substitute beef broth with water or vegetable broth if preferred.
- Make sure to cut potatoes into uniform pieces to ensure even cooking.
- Covering the skillet while simmering traps steam and helps potatoes cook faster.
- For a richer flavor, consider adding a splash of Worcestershire sauce or a pinch of chili flakes.
- Leftovers can be refrigerated for up to 3 days and reheated on stovetop or microwave.
