Description

These Healthy Greek Yogurt Biscuits are a simple and delicious two-ingredient recipe perfect for a quick and wholesome snack or side. Made with just plain Greek yogurt and self-rising flour, these fluffy biscuits come together effortlessly and bake to a golden perfection. Lightly brushed with olive oil or melted butter and optionally sprinkled with kosher salt, they deliver a tender crumb and a subtle tang with every bite.

Ingredients

Scale

Biscuits

  • 2 cups plain Greek yogurt (such as Fage)
  • 2 cups self-rising flour (unbleached)

For Finishing

  • 1 teaspoon kosher salt (optional, for sprinkling)
  • Olive oil cooking spray or melted butter (for brushing or spraying before baking)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and line a small baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix Ingredients: In a mixing bowl, stir together the Greek yogurt and self-rising flour until a chunky dough forms and the ingredients are well combined.
  3. Knead Dough: Turn the dough onto a well-floured surface and knead it gently by hand for about 60 seconds until it forms a smooth, round ball.
  4. Shape Dough: Press the dough into a ¾ inch thick rectangle. Fold the top half towards the center, then fold the bottom half up to meet it without overlapping. Rotate the dough 90 degrees and repeat this folding process two more times. Finally, press the dough again into a ¾ inch thick rectangle.
  5. Cut Biscuits: Flour a biscuit cutter approximately 2 ¾ inches in diameter. Press it straight down into the dough without twisting to avoid deflating. Place the biscuits close together on the baking sheet so they touch, which helps them rise upwards during baking.
  6. Add Finishing Touches: Lightly spray the biscuits with olive oil cooking spray or brush them with melted butter. If desired, sprinkle the tops with kosher salt for extra flavor.
  7. Bake Biscuits: Bake on the middle or top oven rack for 17 to 23 minutes until the biscuits puff up and turn a beautiful golden brown. Use the middle rack for hotter ovens or the top rack for ovens that run cooler to ensure even browning.
  8. Cool and Serve: Remove from the oven and allow the biscuits to cool for 10 to 15 minutes. Serve warm with butter, jam, or your favorite toppings and enjoy!

Notes

  • Be careful not to twist the biscuit cutter when cutting to keep the biscuits light and fluffy.
  • Folding the dough several times helps create layers for flakier biscuits.
  • Using self-rising flour eliminates the need for baking powder or soda.
  • You can substitute melted butter for olive oil spray if you prefer a richer flavor.
  • Serve warm for the best taste and texture.
