Crust

  • 1/2 cup fresh lemon juice (about 2-3 lemons)
  • Zest of 1 lemon
  • 1 teaspoon baking powder

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper to prevent sticking and ensure easy removal of the bars.
  2. Make the Crust: In a mixing bowl, combine the all-purpose flour, 1/2 cup granulated sugar, and softened unsalted butter. Mix these ingredients until the mixture becomes crumbly, then press it firmly and evenly into the bottom of the prepared baking pan to form the crust.
  3. Bake the Crust: Bake the crust alone for about 15 minutes, or until it turns lightly golden. This step helps ensure a crisp base for the lemon filling.
  4. Prepare the Lemon Filling: In another bowl, whisk together the eggs, remaining 1 cup granulated sugar, fresh lemon juice, lemon zest, baking powder, and a pinch of salt until the mixture is smooth and well combined.
  5. Assemble and Bake: Pour the lemon filling mixture over the warm baked crust, spreading it evenly. Return the pan to the oven and bake for an additional 20 to 25 minutes, or until the filling is set but still slightly jiggly in the center.
