Instructions
- Prepare the thickening mixture: In a medium bowl, combine the cornstarch with a small amount of coconut milk to create a smooth slurry. This will prevent lumps when cooking.
- Mix main ingredients: Pour the remaining coconut milk into a saucepan over medium heat. Add the sugar, salt, and vanilla extract, stirring until sugar dissolves completely.
- Cook the pudding: Gradually whisk the cornstarch slurry into the simmering coconut milk mixture. Continue stirring frequently to avoid lumps and cook until the mixture thickens into a creamy pudding consistency, approximately 10 to 15 minutes.
- Cool the Majarete: Remove from heat and pour the pudding into serving bowls or glasses. Let it cool for a few minutes, then refrigerate for at least an hour to fully set and chill.
- Add toppings and serve: Before serving, top each portion with fresh mango or berries, drizzle caramel sauce over the top, and sprinkle with toasted coconut flakes for added texture and sweetness.
