Dip Ingredients
- 1 (8‑oz.) pkg. cream cheese, softened
- 1 (8‑oz.) container sour cream (about 1 cup)
- 1 tablespoon Old Bay seasoning
- 1 ½ teaspoons hot sauce (such as Tabasco)
- 1 (8‑oz.) pkg. thick‑cut, pre‑shredded Mexican 4‑cheese blend
- 1 (4‑oz.) can diced green chiles, drained
- 1 (15‑oz.) can sweet whole‑kernel corn, drained and divided (about 1 ¼ cups + ¼ cup)
- Fresh cilantro leaves (optional)
- Tortilla chips, for serving
Instructions
- Mix the base ingredients: In a medium bowl, combine the softened cream cheese, sour cream, Old Bay seasoning, and hot sauce. Stir until the mixture is smooth and creamy, ensuring the seasoning is evenly distributed.
- Add cheese and veggies: Fold in the shredded Mexican 4-cheese blend, drained diced green chiles, and 1 ¼ cups of the drained sweet whole-kernel corn. Mix gently until all ingredients are well incorporated.
- Garnish the dip: Top the dip mixture with the remaining ¼ cup of corn. Optionally, garnish with fresh cilantro leaves to add a burst of color and fresh flavor.
- Serve: Serve the dip immediately with tortilla chips for dipping. This dip is best enjoyed fresh and cold.
Notes
- For a spicier kick, increase the amount of hot sauce to taste.
- Allow the dip to chill in the refrigerator for 30 minutes if you prefer it colder and flavors more melded.
- Fresh cilantro is optional but adds a nice freshness to the dip.
- Use thick-cut pre-shredded cheese for better texture and melt.
- This dip can be made a few hours ahead and refrigerated; stir before serving.
