Ingredients
Scale
Crust
- 2 cups frozen tater tots
Filling
- ½ pound ground breakfast sausage
- 6 large eggs
- ½ cup low fat cottage cheese (2%)
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup freshly grated mozzarella cheese
Garnish
- Freshly chopped parsley (optional)
Instructions
- Prepare the crust: Preheat the oven to 400°F (200°C) and grease a 9-inch deep-dish pie dish with butter. Spread the frozen tater tots evenly in the pie dish and bake for 15 minutes until partially cooked and starting to crisp.
- Form the crust layer: Remove the tater tots from the oven and mash them gently into an even layer that covers the bottom and sides of the pie dish, creating a crust-like base.
- Lower oven temperature: Reduce the oven temperature to 350°F (175°C) to prepare for baking the quiche filling.
- Cook the sausage: While the oven cools, cook the ground breakfast sausage in a skillet over medium to medium-high heat, breaking it apart and cooking until browned and fully cooked. Remove from heat and let it cool slightly.
- Prepare the egg mixture: In a large bowl, whisk together the eggs, low-fat cottage cheese, salt, and black pepper until well combined. Stir in the grated mozzarella cheese and the cooled cooked sausage, mixing thoroughly.
- Assemble and bake: Pour the egg and sausage mixture evenly over the mashed tater tot crust in the pie dish. Bake at 350°F for 30 minutes or until the center is fully set and the quiche is cooked through.
- Cool and garnish: Remove the quiche from the oven and allow it to cool for at least 5 minutes before slicing. Garnish with freshly chopped parsley if desired, then serve warm and enjoy.
Notes
- For a crispier crust, you can bake the tater tots a few minutes longer before mashing.
- Feel free to substitute breakfast sausage with turkey sausage or a vegetarian alternative.
- If you prefer a richer quiche, you can use whole milk cottage cheese or add a splash of milk or cream to the egg mixture.
- This quiche can be prepared ahead and refrigerated, then reheated in the oven before serving.
- Adding vegetables like sautéed onions, peppers, or spinach can enhance flavor and nutrition.
