- 12 large eggs
- 2 cups milk
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh parsley, chopped
Base and Toppings
- 1 package (10-12 ounces) English muffins, toasted and cut into quarters
- 1 cup Canadian bacon, diced
- 1 cup shredded Swiss cheese or cheddar cheese
Optional
- 1 cup hollandaise sauce
- Extra chives or parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and black pepper until fully combined and smooth. Then stir in the chopped fresh chives and parsley for added flavor.
- Layer Ingredients: Arrange the toasted, quartered English muffins evenly on the bottom of the greased baking dish. Sprinkle diced Canadian bacon evenly over the muffin layer.
- Combine and Add Cheese: Pour the egg mixture evenly over the English muffins and Canadian bacon layers. Then sprinkle the shredded Swiss or cheddar cheese evenly on top of the casserole.
- Bake: Place the dish uncovered in the oven and bake for 40 to 45 minutes, or until the top is set, golden brown, and a knife inserted in the center comes out clean.
- Rest and Serve: Remove from oven and let the casserole rest for about 10 minutes to set before serving. Garnish with extra chives or parsley if desired.
- Optional Hollandaise Sauce: While the casserole is baking, prepare your favorite hollandaise sauce to serve on top for a classic Eggs Benedict experience.
Notes
- Use either Swiss or cheddar cheese based on your flavor preference; cheddar will provide a sharper taste.
- To toast English muffins, slice and toast them under a broiler or in a toaster before layering.
- The hollandaise sauce is optional but highly recommended for an authentic Eggs Benedict flavor.
- This casserole can be prepared the night before; assemble and refrigerate, then bake in the morning for ease.
- Garnish with fresh herbs for a visually appealing and fresh-tasting dish.
