  • 3 tablespoons mirin
  • 2 tablespoons dark soy sauce

Instructions

  1. Cook Noodles: Cook the Lo Mein noodles according to the package instructions, then rinse them under cold water to stop cooking and prevent sticking. Set aside.
  2. Brown Pork: Heat peanut oil in a large skillet over medium-high heat. Add the ground pork and cook until browned and cooked through, breaking it up as it cooks. Stir in 1/4 cup of the sliced green onions during the last minute of cooking.
  3. Prepare Sauce: In a bowl, whisk together the low-sodium chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until combined.
  4. Toss Ingredients: Add the cooked noodles and coleslaw mix to the skillet with the browned pork. Pour the prepared sauce over the mixture and toss everything together for 2 to 3 minutes, allowing the sauce to coat the ingredients and the coleslaw to slightly wilt.
