Description

A healthy and delicious recipe featuring lean ground turkey stuffed in vibrant red bell peppers, topped with melted mozzarella cheese, and baked to golden perfection. This comforting meal is low in fat and packed with protein, making it a perfect choice for a nutritious weeknight dinner.

Ingredients

Scale

Meat Mixture

  • 1 lb ground turkey, fat free
  • 6 oz can tomato paste
  • 1/4 cup water
  • 1 tbsp poultry seasoning

Vegetables and Topping

  • 4 red bell peppers
  • 1 cup mozzarella cheese

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees Fahrenheit to prepare for baking the stuffed peppers.
  2. Prepare Peppers: Use a sharp knife to carefully cut off the tops of the red bell peppers. Remove and discard all seeds and membranes inside using a spoon. Place the cleaned peppers upright in a baking dish and set aside.
  3. Cook Turkey: In a large skillet over medium-high heat, cook the ground turkey, stirring frequently until it is fully browned and cooked through.
  4. Add Seasonings: Stir in the tomato paste, water, and poultry seasoning into the skillet with the cooked turkey. Mix thoroughly to combine all ingredients.
  5. Simmer Filling: Continue to cook the meat mixture for an additional 2-3 minutes, stirring occasionally, until it is heated through and well combined.
  6. Stuff Peppers: Spoon the turkey mixture evenly into each prepared bell pepper. Then, sprinkle about 1/4 cup of mozzarella cheese on top of each stuffed pepper.
  7. Bake: Transfer the baking dish to the preheated oven and bake the stuffed peppers for 20-25 minutes, or until the cheese is melted, golden, and bubbly. Remove from oven and serve warm.

Notes

  • For a spicier twist, add a pinch of red pepper flakes to the meat mixture.
  • You can substitute mozzarella with cheddar or Monterey Jack cheese if preferred.
  • To save time, prepare the turkey filling in advance and refrigerate before stuffing and baking.
  • Leftover stuffed peppers can be stored in the refrigerator for up to 3 days.
