Description

A savory and delicious Spinach Feta Bake Squares recipe that’s perfect for breakfast, brunch, or a light snack. This bake combines fresh spinach, tangy feta, and aromatic herbs into a moist, chewy square that’s easy to prepare and bake. With its golden crust and flavorful filling, it’s a crowd-pleaser that’s great served warm, chilled, or at room temperature.

Ingredients

Scale

Vegetables and Aromatics

  • 2 cups fresh spinach, chopped (or 250 g frozen spinach, thawed and squeezed dry)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced

Dairy and Eggs

  • 200 g feta cheese, crumbled
  • 2 large eggs
  • ½ cup milk (120 ml)
  • Optional: ¼ cup grated mozzarella or Parmesan cheese

Dry Ingredients

  • 1 cup all-purpose flour (120 g)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried oregano or dill

Oils and Fats

  • ½ cup olive oil (120 ml) plus 1 tablespoon for sautéing

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 180°C (350°F) and lightly grease or line a square baking dish with parchment paper to prevent sticking.
  2. Sauté Vegetables: Heat 1 tablespoon olive oil in a skillet over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and fragrant. Add the chopped spinach and cook until wilted (if using fresh) or until excess moisture evaporates (if using frozen). Remove from heat and let this mixture cool slightly.
  3. Mix Wet Ingredients and Dry Ingredients: In a large mixing bowl, whisk together the eggs, milk, and olive oil until smooth. Gradually stir in the flour, baking powder, salt, black pepper, and dried oregano or dill until the batter is thick but pourable.
  4. Combine Fillings: Fold the cooled spinach and onion mixture into the batter along with the crumbled feta cheese. If desired, add grated mozzarella or Parmesan cheese and gently mix to distribute evenly.
  5. Bake: Pour the batter evenly into the prepared baking dish, smoothing the surface with a spatula. Bake in the preheated oven for 35 to 40 minutes, or until the top is golden and the center is set.
  6. Cool and Serve: Remove from the oven and let cool for at least 10 minutes in the dish before cutting into 9 to 12 squares. Serve warm, at room temperature, or chilled according to preference.

Notes

  • You can substitute frozen spinach for fresh, just ensure it’s thawed and thoroughly squeezed to remove excess water.
  • Adding mozzarella or Parmesan cheese enhances cheesiness but is optional.
  • Serve these squares as a snack, breakfast item, or light lunch.
  • Store leftovers covered in the refrigerator for up to 3 days or freeze for longer storage.
  • Use parchment paper for easier removal and cleaner slicing.
