Description

These Christmas Caramel Nut Clusters are a delightful holiday treat combining rich caramel, crunchy mixed nuts, and a drizzle of smooth chocolate. Perfect for gifting or enjoying alongside a festive cup of coffee, they are easy to prepare and ready in just 25 minutes.

Ingredients

Scale

Caramel Mixture

  • 1 cup caramel candies
  • 2 tablespoons heavy cream
  • 2 cups mixed nuts

Chocolate Drizzle

  • 1 cup chocolate chips

Instructions

  1. Melt Caramel: In a saucepan over low heat, combine the caramel candies and heavy cream. Stir continuously until the caramel is fully melted and smooth.
  2. Combine Nuts: Add the mixed nuts to the melted caramel mixture, stirring well to evenly coat all the nuts.
  3. Form Clusters: Using a spoon, drop spoonfuls of the caramel-nut mixture onto a baking sheet lined with parchment paper, forming clusters.
  4. Melt Chocolate: Place the chocolate chips in a microwave-safe bowl and microwave in short bursts, stirring between intervals, until smooth and melted.
  5. Drizzle and Set: Drizzle the melted chocolate over the caramel nut clusters. Place the baking sheet in the refrigerator and chill until the chocolate is set, about 15-20 minutes.

Notes

  • Use parchment paper to prevent the clusters from sticking to the baking sheet.
  • Feel free to use any combination of nuts such as almonds, pecans, walnuts, or cashews.
  • For a different flavor, try adding a pinch of sea salt on top before chilling.
  • Store clusters in an airtight container in the refrigerator for up to one week.
  • If chocolate becomes too thick when melting, add a teaspoon of vegetable oil to smooth it out.
