Description

Bruschetta Topping

  • 1 cup Fresh Tomatoes (Dice and pat dry)
  • 1/4 cup Red Onion (Finely diced)
  • 1/4 cup Fresh Basil (Finely chopped)
  • 2 tablespoons Extra Virgin Olive Oil (For brushing the bread and mixing with bruschetta)
  • Salt and Pepper to taste

Additional

  • 1 clove Garlic (Rub on cooked bread)
  • 1 tablespoon Balsamic Glaze (Optional drizzle)


Instructions

  1. Prepare the Bruschetta Topping: Press the diced tomatoes with paper towels to remove excess moisture. In a bowl, combine the drained tomatoes with finely diced red onion, chopped basil, olive oil, and a pinch of salt and pepper. Mix well to combine.
  2. Prep the Bread: Brush one side of each ciabatta slice with extra virgin olive oil. On the non-oiled side of one slice, layer half of the mozzarella slices, then spoon over the bruschetta mixture, and sprinkle with Parmesan. Top with the other ciabatta slice, olive oil-side facing out.
  3. Cook the Sandwiches: Heat a pan or skillet over medium heat. Place the sandwich carefully on the pan and cook until the bottom is golden brown and crispy, about 3-4 minutes. Flip the sandwich, then immediately rub a peeled garlic clove over the cooked bottom side. Cook until the other side is also golden brown and the cheese has melted, about another 3-4 minutes.
  4. Final Touches and Serving: Transfer the sandwich to a cutting board with the garlic-rubbed side down. Rub the exposed bread side with the garlic clove as well. Drizzle the top with balsamic glaze if using. Slice and serve warm for the best flavor experience.
