Scale
Base Ingredients
- 2 cups old-fashioned oats
- 1½ cups milk (dairy or nut milk)
- â…“ cup pure maple syrup or brown sugar
- 2 tablespoons melted butter or coconut oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Fruit
- 1½ cups mixed berries (fresh or frozen; strawberries, raspberries, blueberries)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch or 11×7-inch baking dish and set it aside to prepare for the oatmeal mixture.
- Combine Ingredients: In a large mixing bowl, thoroughly mix together the oats, milk, maple syrup (or brown sugar), melted butter (or coconut oil), egg, vanilla extract, baking powder, ground cinnamon, and salt until the mixture is smooth and well combined.
- Add Berries: Gently fold in 1 cup of the mixed berries into the oatmeal batter carefully to avoid crushing the berries, preserving their shape and texture.
- Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly. Sprinkle the remaining ½ cup of mixed berries evenly over the top to add extra burst of color and flavor.
- Bake: Place the baking dish into the preheated oven and bake for 30 to 40 minutes, or until the center is set and the edges turn lightly golden brown, indicating the oatmeal is cooked through.
- Serve: Remove the baked oatmeal from the oven and allow it to cool for about 5 minutes. Serve warm, optionally drizzling with extra maple syrup or a splash of milk for added sweetness and creaminess.
Notes
- Use fresh or frozen berries as preferred; no need to thaw frozen berries before adding.
- For a vegan version, substitute the egg with a flax egg and use plant-based milk and oil.
- Adjust sweetness by increasing or decreasing the maple syrup or brown sugar to taste.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat before serving.
- Adding a handful of nuts or seeds can boost texture and nutrition.
