For the Sadza (Maize Meal)

  • 2 cups cornmeal
  • 4 cups water

For the Nyama (Beef Stew)

  • 1 pound beef chunks, diced
  • 1 tablespoon cooking oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 medium tomatoes, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef stock or water
  • 1 tablespoon fresh parsley, chopped (optional)


Instructions

  1. Boil Water and Add Salt: Start by boiling 4 cups of water in a large saucepan. Once boiling, add the salt to season the water.
  2. Whisk in Cornmeal: Gradually whisk in the cornmeal, making sure to avoid lumps to ensure a smooth texture.
  3. Simmer Sadza: Lower the heat and let the mixture simmer for about 10-15 minutes, stirring frequently until it thickens and pulls away from the sides of the pot.
  4. Keep Sadza Warm: Remove the pot from heat and cover it to keep the sadza warm while you prepare the beef stew.
  5. Heat Oil in Skillet: In a separate skillet, heat the cooking oil over medium-high heat.
  6. Brown the Beef: Add the diced beef to the hot skillet and sear until browned on all sides, about 5-7 minutes, then remove the beef and set it aside.
  7. Sauté Onions and Garlic: In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent, around 3-4 minutes.
  8. Add Bell Pepper: Toss in the diced bell pepper and sauté for an additional 2 minutes.
  9. Add Tomatoes and Spices: Stir in diced tomatoes, smoked paprika, ground cumin, salt, and black pepper to build flavor.
  10. Return Beef and Add Liquid: Put the browned beef back into the skillet and pour in the beef stock or water.
  11. Simmer the Stew: Cover the skillet and allow the mixture to simmer for 30-40 minutes, or until the beef is tender and the flavors meld together.
  12. Add Fresh Parsley: If using, sprinkle fresh chopped parsley just before serving for a fresh herbal note.
  13. Serve: Plate by scooping a generous portion of the maize meal and ladling the savory beef stew over the top.
