For the Sadza (Maize Meal)
- 2 cups cornmeal
- 4 cups water

For the Nyama (Beef Stew)
- 1 pound beef chunks, diced
- 1 tablespoon cooking oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 medium tomatoes, diced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup beef stock or water
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- Boil Water and Add Salt: Start by boiling 4 cups of water in a large saucepan. Once boiling, add the salt to season the water.
- Whisk in Cornmeal: Gradually whisk in the cornmeal, making sure to avoid lumps to ensure a smooth texture.
- Simmer Sadza: Lower the heat and let the mixture simmer for about 10-15 minutes, stirring frequently until it thickens and pulls away from the sides of the pot.
- Keep Sadza Warm: Remove the pot from heat and cover it to keep the sadza warm while you prepare the beef stew.
- Heat Oil in Skillet: In a separate skillet, heat the cooking oil over medium-high heat.
- Brown the Beef: Add the diced beef to the hot skillet and sear until browned on all sides, about 5-7 minutes, then remove the beef and set it aside.
- Sauté Onions and Garlic: In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent, around 3-4 minutes.
- Add Bell Pepper: Toss in the diced bell pepper and sauté for an additional 2 minutes.
- Add Tomatoes and Spices: Stir in diced tomatoes, smoked paprika, ground cumin, salt, and black pepper to build flavor.
- Return Beef and Add Liquid: Put the browned beef back into the skillet and pour in the beef stock or water.
- Simmer the Stew: Cover the skillet and allow the mixture to simmer for 30-40 minutes, or until the beef is tender and the flavors meld together.
- Add Fresh Parsley: If using, sprinkle fresh chopped parsley just before serving for a fresh herbal note.
- Serve: Plate by scooping a generous portion of the maize meal and ladling the savory beef stew over the top.
